Zu guter Letzt ergab sich noch ein unerwarteter Geistesblitz, beflügelt durch Gertrude Steins Buch über Picasso, der das Publikum vollkommen überraschte.
Anschließend sprach Bottura über Innovationen und darüber, Konventionen über Bord zu werfen, Erwartungen umzustürzen und das Publikum mit auf eine faszinierende Reise in eine neue, unbekannte Welt zu nehmen und gleichzeitig die enge Verbindung zu Italien und seinen traditionellen Aromen durch Inspirationen aus den kulinarischen Traditionen aus dem Norden und Süden der Halbinsel aufrechtzuerhalten.
