Nach Kriegsdienst und Gefangenschaft von 1914 bis 1920 studierte er Staats- und Wirtschaftswissenschaften in Berlin, 1923 erfolgte die Promotion zum Dr. rer. pol. 1923 trat Dr. Dr. Gerhard Fürst als wissenschaftlicher Mitarbeiter in das Statistische Reichsamt Berlin ein.
Zuerst befasste er sich mit der Lohnstatistik, später mit der Vorbereitung und Auswertung der Volks- und Berufszählung.
1930 ging Dr. Dr. Fürst nach Genf, wo er bis 1939 als Sekretär des „ Ausschusses Statistischer Sachverständiger “ beim Völkerbund für die Veröffentlichungen zuständig war.

In 1930, Dr. Dr. Fürst went to the League of Nations in Geneva where, until 1939, he was responsible for publications as Secretary of the Statistical Experts Committee.
