Die Bedeutung der Koagulase positiven Staphylokokken, mit Staphylococcus aureus als ihrem wichtigsten Vertreter liegt aus lebensmittelhygienischer Sicht in ihrer Fähigkeit, als Superantigene ( SAgs ) bezeichnete Staphylokokkken Enterotoxine ( SE ) und Enterotoxin-ähnliche SAgs ( SE-like ) zu bilden.
Bei letzteren gilt die Stimulation des Brechreizes (emetische Aktivität) jedoch noch nicht als belegt.
Mittlerweile sind 20 verschiedene Typen von Staphylokokkken Enterotoxine (SE-Typen) beschrieben.
